Blog Excerpt not works

Excerpt is empty, but WordPress not automatically creates an excerpt using the first 55 words of the post. How is possible to have just part of the article and only if I need to read the article then to click Read More like in your example?

I decide to make my plugin to change READ MORE text, because if I change the default ‘READ MORE’ text and I type in the text that I want to be used instead, this is not working.
Is it possible to change this in your code and if I change the default ‘READ MORE’ text in block editor this to be displayed?
